First Ever Homemade From Scratch Pumpkin Pie

It is cooling now.  And Michael and I plan to have a little slice for breakfast in the morning.  I probably won't be able to sleep tonight. :)

Each year a few weeks before Halloween two Sibcy Cline Realty ladies (AKA around here as the pumpkin ladies) drop off pumpkins by every one's mailboxes.  this year there were a few extra pie pumpkins surrounding our mailbox.  They must have seen all the kids that are here on a daily basis. And the directions to the contest (read about it here) and the recipe for Grandma Lange's Pumpkin Pie.  Tonight was the night to see if I could do it.  Ms Renee has already made hers.  She cooks and bakes all the time and always her dishes are super good!

Bakes Pie Pumpkins
Scrub the outer skin of the pie pumpkin, cut pumpkin in half. scoop out the strings and seeds.  Place cut side down in a glass baking dish or baking sheet.  Pout 1/4 cup of water into the baking dish.  Bake for 30-35 minutes in a 350 degree oven.  Test for doneness with a fork, should feel like a soft baked potato.  You may need to adjust cooking time if your pumpkin is smaller that your cupped hand.  Remove from oven and let cool.  Scoop cooled pumpkin out of the shell and mash it with the back of a wooden spoon.  Now you are ready to make Grandma Lange's Pumpkin Pie.


Grandma Lange's Pumpkin Pie
1 cup of pumpkin
1/2 cup of sugar
2
Tablespoons of flour
2 eggs
1/2 teaspoon of cinnamon
1/4 teaspoon of gloves
1/4 teaspoon of allspice
1/4 teaspoon of salt

Stir together all ingredients and add 1 1/2 cups of milk continuing to stirring until all ingredients are combined.  Pour into prepared (meaning not yet baked) pastry shell and bake at 425 degrees for 45-55 minutes.  You can also pour pumpkin into buttered ramekins and bake until a knife inserted into the custard comes out clean.
So I have to let you know that the dark edges really aren't burnt.  When I was putting the pie on the cookie sheet (not to self...put empty pie crust on baking sheet before filling next time) it sorts ran all over the place.  I even went bare sock footed to Mr Renee's to get foil to cover the crust so it wouldn't burn.  We are still waiting for it to cool....tomorrow morning will not come soon enough.

It is 6:28AM and I can say that Mrs. Smith had better watch her back.  I don't even like pumpkin pie.  And I think it is pretty darn good!  The pumpkin pie experts are still sleeping so I will know officially if it was a success or a failure for another 30 minutes or so. But my guess is they will give it a two thumbs up!
