Family Movie Night

With Mark already into the Christmas season, last night since we all were home safe and sound so we decided to have Movie Night. Ratatouille came out on DVD yesterday...so Mark grabbed a copy for us. Along with the DVD you get a Chef hat and an apron. Michael was thrilled beyond thrilled! He wore his "outfit" during the entire movie and he is wearing it right now over his pj's coloring a card for Sarah Beth. Such a busy little thing. Today I asked him what he wanted to be when he grew up. He thought about it for a minute and said that for sure he was going to be an engineer but maybe sometimes when he wasn't busy on the train he might go back to the dining car and be a chef. Would you call that bi-vocational?Ratatouille is actually a real dish that you can cook. I think we are going to try to fix it next weekend. I found several recipes for it but this sounds like one that my family might eat...
2 medium zucchini
2 medium yellow squash
1 green pepper
1 sweet red pepper
2 medium tomatoes
1 small eggplant
1 medium onion
2 garlic cloves
1 tsp parsley
1 tsp basil
1/8 c EVOO
1/4 c Parmesan cheese
Slice all vegetable thin. Mix onions. EVOO, garlic and other herbs. Spread 1/2 of mixture in shallow microwaveable dish. Layer 1/2 vegetables on onion mixture. Sprinkle 1/2 Parmesan cheese on top. Repeat layering with the other 1/2 ingredients. Micro wave loosely covered 10-15 minutes. Check for doneness. If required microwave more. Or you can use an oven safe dish and bake for 25-25 minutes at 350 degrees. I will let you know how it goes.

On a very serious note...I got to talk to Aunt Kate this morning and he told me that the surgeon came in late last night and they have decided to remove Sarah Beth's brain tumor. Sarah Beth seems to be ready for the surgery. Emmy and I are going home for a few days to help where ever we can. Pray for the family that they have peace. Pray for Sarah Beth that the surgery is successful with no side effects. And pray that God directs the surgeons hands. And pray that we don't...run into...any deer in our travels.
