Canada Fish Fish Fry

It seems to be a real challenge to coordinate a dinner around here. Work schedules always seem to get in the way. But we did it...except since it was so last minute Sarah had to work.
Our family has always as far back as I can remember has always gone fishing on Lake Ontario. It is in our blood. So this trip my Dad brought some northern pike and two small pieces of perch (just for me...it is my favorite to catch and to eat) so we could have a fish fry. Let me just say that I learn a lesson or two...don't mess with the system and my Dad is fish fry KING.Before you do anything, you must check to see if you have everything that you need. We ended up having to go to Kroger to get just the right kind of breading...Kellogg's cornflakes crumbs. Then there is the assembly line. Every must be in the proper place for maximum efficiency. I was instructed to hold the place with the fish and dunk in into the egg bath.(that dunk is an official fish fry term)Place the fish in hot oil in a circular fashion around the iron skillet. Testing ever so often for brownness on the bottom. Flip with a fork (not tongs). When done, remove in the same patter as you placed them in the skillet. Place on a paper towel to drain all that wonderful grease.Tini is not a fan of fish but I have to hand it to her she tried both...Peep's fried and Bryce's baked. They bother were good. We had Emmy's cole slaw...she wasn't able to join us because of a previous engagement. And Sarah was still working. Not to worry about having any leftovers. Michael tasted it, likes it and kept asking for more. He ate just about as much a Peep did. This morning he even wanted some for breakfast. He wants to know if we can have another one real soon.

Robin this one is for you...Bryce was in charge of dessert. He come in with Neapolitan ice cream with Nestle's Nesquick. Funny thing was...Cassie had called earlier in the day saying that she had introduced her kids to something she loved from her past....seems my sister always had three flavored ice cream and topped it with Nestle's. Neither Bryce or Cassie had talked to each other that day. So they had no idea what we were having. Both were blown away when I told Cassie what we were having for dessert. I silently shed a little tear. It was pretty cool.
